small change to network protocol

I made a small change to the network protocol: the reply to the START
command now includes a member that specifies the byte order of the
image data (big or little-endian). This will be important once there
is a backend that supports depths greater than 8 bits/channel.

At present, (most of) the frontends do not support depths greater than
8 bits/channel, but the reason I'm making this change now is so that
we won't have to change the network protocol or the network servers
once this feature becomes more important. At this point, I updated
the docs and saned.

Everything else will follow in the next SANE release.
